This is even more remarkable as our cakes are different. Regular Cakes usually are mainly made of gluten containing (wheat) flour and household sugar. Gluten very much defines texture, sugar very much defines our habits of taste. LOCABA’s cakes don’t contain any wheat flour, any gluten, and are completely free from refined sugar (no household sugar). So your cake experience might be different to what you are used!
As we use nuts (almond powder, coconut flour, hazelnut powder…) instead of grain flour our sponge might feel more dense than conventional high-carb and gluten containing sponge.
On top of that, we don’t use animal based gelatin as this contradicts our idea of clean baking. We instead use the plant based and more healthy agar agar. This also might lead to a slightly different texture than you are used to.
