Un-guilt your Christmas festivities!
We’ve received requests to do a low-carb Log Cake from our LOCABA friends since fall. Now, after some experimenting with the recipe – please give it up for our first LOCABA LOG CAKE! 👏
This season brings a nicely balanced Christmas choir of dark chocolate (without refined sugar, of course) and fresh berries – chocolate ganache meets the juicy ‘n’ fruity taste plus a beneficial portion of vitamins. As this cake is low-carb and offers valuable fats, it is also suitable for keto nutrition. Our Log Cake serves 6 to 10 persons. (Keep your cake in the chiller and you can keep it easily for three days.)

Note “carbohydrates”: We don’t define the sugar alcohol erythritol as carbohydrate. Erythritol is secreted without being metabolized at all. The energy balance doesn’t have to take it into account.
Note “sugar”: We don’t use any household sugar, the number in the table above refers to naturally contained sugar in fruit and milk plus small amounts of organic coconut blossom sugar which is used in this product. We generally use the naturally produced sugar substitute erythritol and small amounts of stevia.
Note “grain free”: Instead of grain and especially wheat flour we mainly use coconut flour and almond flour.
